Maple season begins mid-February when the days become longer and warmer. We're excited to see spring coming as the sap begins to run. We start each day by boiling sap collected the evening before. If there has been a large run of sap, our wood-fired evaporator is often stoked far into the night and great clouds of fragrant steam rise into the starlit sky. Maple sugaring season varies from four days to four weeks, depending entirely on weather.

One gallon of maple syrup is produced by boiling down 30-40 gallons of sap. Maple syrup is graded by color. The syrup we offer is dark amber U.S. Grade A. This syrup has a rich amber flavor which makes it excellent for table or cooking use.

Taking care to tap only healthy, vigorous, mature trees. Our process is sustainable and MOFGA certified organic.
